Have you ever tried Celestia?
Full 3D travel amongst a high percentage of the stars in our local region, and many of the galaxies outside ours. Although the galaxies are transparent, bitmap-like objects. The stars however are very nice and have the appropriate size and color upon close approach. You can install an additional 2,000,000+ star pack and ultra high resolution surface features of most of the inner planets from a huge database of add-ons.
One thing I quickly discovered. . . to have stars whiz by you as in Star Trek, you have to be traveling at speeds way, waaaaay faster than anything the Enterprise could only dream of doing.
The "Motherlode" of add-ons.

Another very cool gravity simulator is "Universe Sandbox".
Works extremely well and both the simulations and POV movement are liquid smooth if you have a powerful PC. I am continuously amazed how well it appears to process hundreds of objects accurately. It is a deep and rich simulator and the full version offers an amazing amount of canned sims, and also allows you to make your own initial conditions.
One of the best space sims available for a home PC.

Made a fairly good attempt at creating the known BZ universe in Universe Sandbox. It does quite well.

The thing that Sandbox Universe helped me with the most is reducing disorientation due to reference frame perspective. Here's a quick little video I just made that helps explain it.
